Fish soup with salmon

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 cup potatoes, peeled and diced
  • 4 cups fish stock or vegetable broth
  • 1 can (400g) diced tomatoes (or 2 fresh tomatoes, peeled and chopped)
  • 500g salmon fillets, cut into bite-sized pieces
  • 1 teaspoon dried dill or 2 tablespoons fresh dill, chopped
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh lemon juice (optional, for added brightness)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, celery, and red bell pepper. Cook for about 5-7 minutes, until the vegetables start to soften.

  2. Add potatoes and broth: Stir in the diced potatoes and pour in the fish stock or vegetable broth. Add the diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, until the potatoes are tender.
